Kumquat Lemon Ginger Marmalade

Kumquat Lemon Ginger Marmalade


If you’ve never had kumquats they are basically little citrus candies that can be eaten straight off the tree. Yes, even the peel.
After a large harvest I decided to make this quick marmalade. So here’s what you need to make it:
1️⃣ 2 cups of roughly chopped kumquats
2️⃣ Juice of 1 lemon
3️⃣ 1/2 cup agave (sub honey or sugar)
4️⃣ 1/2 cup water
5️⃣ 1/2 teaspoon grated ginger •
➡️ Cut kumquats in half to remove seeds then give them a rough chop
➡️ Add juice of lemon & kumquats to a small saucepan over medium heat & bring to a slight boil
➡️ Add agave, water, & grated ginger to sauce pot & stir. Lower heat & cover pot. Leave for about 20 minutes

➡️ Uncover & stir- taste & add more sweetener if needed. The longer you leave on the stove the thicker the marmalade will get.
➡️ Remove from store & let cool. Transfer to airtight container & keep in the refrigerator
