Cabbage & Herb Salad

It’s the start of 2018, & I have a goal to eat healthier. What does that mean? Well, to start it means I want half of my lunch & dinner plates to be solely vegetables. I have a garden full of fresh veggies & herbs, so this won’t be too difficult. Here’s a simple & healthy recipe that takes very little time to prepare, & you'll have leftovers for your next meal. Ingredient List:

  • 1 ½ cucumbers

  • ½ a head of cabbage

  • 1 bunch of green onions

  • 4 sprigs of dill (or 4 tablespoons)

  • 4 tablespoons of olive oil

  • 4 tablespoons of vinegar

  • Juice of 1 lemon

  • Salt & pepper to taste

Steps:

1. Slice up cucumbers, cabbage, green onion, & dill then add to medium bowl

2. To a small bowl mix olive oil, vinegar, lemon juice, salt & pepper (you can always add more, but not remove so it’s best to go light initially) 

3. Pour liquid mixture into the medium bowl & combine all ingredients

4. Voila- a quick & healthy side dish that you can pile onto your plate 

* You can always add more or less of any of the ingredients it will still taste great! Happy New Year!
